MY FAVOURITE BREAKFAST RECIPES: VEGAN OATMEAL PUDDING
Hey lovelies!
Earlier I tweeted a photo of my breakfast today and a few of you requested the recipe to the content of this cute jar I got from New York.
With me going snowboarding yesterday, I woke up incredibly hungry and craving something tasty and bit more filling so that I could perform adequately in my #pilates class!
Thankfully a day earlier I had prepared some vegan oatmeal pudding, an overly simple to prepare vegan recipe, and when I saw it waiting for me to me in the fridge, I was more than happy to take it out and dig in! Aw, by the way, it’s been 4 days now since I last had something dairy (you can find out more about why I decided to cut cow milk out of my diet here) ! Fingers crossed that I’ll manage to stick up to my vegan diet!
So all you need for this vegan yummy-ness (2-3 servings depending on how hungry you are!):
1 Jar!
150 gr. oats
1/2 cup almond/soy milk
20 gr. raisins (or any other dried fruit you could think of)
1 tbsp. maple syrup (or any other healthy alternative to refined sugar)
cinnamon
Just a pinch of ginger and vanilla
Add all of the ingredients together in a jar, shake them well, and leave it all to rest in the fridge. That’s right - you don’t need to cook the oatmeal, just go to bed, and open when you wake up. Nom nom!
What I love about this recipe is how simply it is to prepare. Also, if you’re working full-time - you no longer have to worry about having to wake up earlier to have a proper breakfast. Plus, with this recipe you don’t have to worry that it will expire any time soon. Pretty handy, eh?
I usually have it with a cup of green tea with jasmine, and if in the mood - add some fresh fruit like blueberries to top it all up.
