I woke up today all inspired to prepare something healthy & yummy. Quite abnormal for me if you ask me. Normally by ‘cooking’ I mean chopping salad (or taking it out of the bag, I know, I know) and seasoning it. But he I’m actually preparing all by myself – my favourite zucchini balls – overly healthy, vegetarian, and tasty.
And while I really really tried to follow the recipe that my grandmother gave me over the phone – I let my creativity thrive by being impulsive and actually coming up with my all version of that delicious yummies.
I’m pretty happy with the final result – so why not proudly share it with you :)))

The Balls:courgettes_balls
2 zucchini
2 eggs
100 gr. feta
50 gr. fine oats
50 gr. bread crumbs
olive oil
salt
pepper
fennel (very important)
The Dip:
Greek yoghurt
Fennel
1 Garlic Clove

After you grate the zucchini, add some salt and let them drain until there’s almost no water left in them (40min-1hour).
Then add the eggs, oats, fennel, salt and pepper and mix the ‘dough’.Then add the cheese so that it doesn’t blend perfectly, but stays in little chunks. To finish off – add some bread crumbs until the dough is thick enough for you to be able to form shapes out of it (you can see that I went for a crazy shaped thingies – but I told you – creativity in the kitchen is key!).
Roll the ready-to-bake balls in some multigrain flour and place them on a baking sheet before you chunk them in the oven and let them bake for around 10-15 mins. Actually I decided to sprinkle some of the olive oil just to make them even more juicy..
P.S. I also fried a few of them, but I personally prefer my food baked.
If you ask me – try both and see which ones appeal to you the most.
For the dip all you need is some greek yoghurt, finely chopped garlic, fennel, salt and pepper to your taste. Make sure to dip those goldies before you go on to splurge into them.
So Philip’s side meal (&my main meal) for dinner is ready and I’m off to my Zumba class to burn the wine calories from last night.
