The Best Damn Soft Ginger Cookies
I bake literally every day. It’s getting a bit ridiculous, because it’s not like we really feel like having home-baked goodies all the time …but baking does get my mind off things. It’s my 15-minutes time alone where I can focus on measuring the ingredients and nothing else.
I literally switch off. Today I omitted the oil and just as I was taking the batter from the fridge all ready to go into the oven I had to add the olive oil… Yep, that’s me.
But the cookies turned out great, so no worries :). Tomorrow, the moms from my mother’s group are coming over for coffee at my place, so that’s my excuse for baking today.
To make the cookies – preheat the oven to 165 C. Then mix together the dry ingredients – flour, baking powder, cinnamon, salt, and grated ginger. In another bowl mix the egg, sugar, molasses, vanilla, and olive oil. Then just add the dry ingredients to the egg mixture and let the batter rest for minimum 30 mins in the fridge. I waited 2 hours just in case. Then scoop the batter onto the baking sheet (around 15 scoops) and bake for 10-12 minutes/
